Coconut Chia Pudding with Fresh Fruit

INGREDIENTS

 

– 3/4 cup coconut milk , full-fat version
– 2 1/2 tbsp pure maple syrup
– 1/2 teasp vanilla extract
– 3 tbsp chia seeds
– chopped fresh fruit , blueberries, strawberries, blackberries, etc.

DIRECTIONS

 

1. In a large mixing bowl, gently whisk the coconut milk, maple syrup, and vanilla extract until well blended.

2. Whisk in the chia seeds.

3. Pour the mixture into 2 or 3 serving bowls or glasses (depending on the size). Let it sit for about 30 minutes at room temperature.

4. Cover and refrigerate for at least 3 hours (for best results, refrigerate overnight). Remove the bowls from the fridge about 15 minutes prior to serving. Top with fresh fruit and serve!
